The island of Sicily gets its name from the Sicel tribe from pre-history. Since then, control of the island has traded hands many times. During the Antiquity period Phoenicians, Greeks, and Romans ruled in turn. With the Middle Ages came new rulers including the Franks, Goths in the form of the Vandals, Italians in the form of the Lombards, Byzantines, Saracens, Vikings, and Normans. The Norman Hauteville dynasty that started the Kingdom of Sicily had a short reign, but confirmed the Latinization of the island and solidified its cuisine. The recipes highlighted here include Arancini al funghi e al pistacchio (mushroom and pistachio arancini), insalata di finocchi e arance (orange and fennel salad), and roasted asparagus with agrodolce sauce.
