Ingredients
- For the mousse base:
- 150g Christmas pudding (crumbled)
- 250ml heavy cream (chilled)
- 50g mascarpone or cream cheese
- 2 tbsp icing sugar
- 1 tbsp brandy or rum (optional, for flavor)
- 1/2 tsp mixed spice (or cinnamon and nutmeg)
- pinch of salt (optional)
- For the garnish:
- Extra crumbled Christmas pudding (to sprinkle on top)
- A dollop of whipped cream
- Fresh red currants or holly leaves (optional, for decoration)
- Dark chocolate shavings or a dusting of cocoa powder
