This is an easy homemade liqueur to make that is packed full of lemony goodness! Limoncello is great served on the rocks or as an essential component of the Lemon Drop cocktail. We modified a recipe from the 12 Bottle Bar. Please note that their recipe used 100 proof vodka. We used 80 proof vodka and adjusted the amount of water accordingly. Also, this recipe can easily be doubled or quadrupled depending on how much limoncello you want to make!

Servings: Makes about 375 mLs of liqueur
TIME: 15 minutes + a week for the vodka to infuse
2 Lemons
1 cup TOPO Vodka
3 oz. simple syrup
3 tsp. water
Use a vegetable peeler to zest the lemons. Place the zest in a Mason jar and add the vodka. Seal the jar and let the mixture infuse at room temperature, shaking it daily for 7 to 10 days. Strain the vodka through a colander, gently pressing the zest to release all the liquid. Discard the solids. Add the simple syrup and water and stir to combine. Using a funnel, transfer the mixture to a clean, dry bottle. Store in the refrigerator and enjoy!
