In a karahi/ wok, add oil, 1kg whole chicken cut into pieces, never take portions it will have smell and your salan/ curry will never come out well. Buy whole fresh small chicken and cut them into pieces. When the chicken changes its colour, add grinded 1 L whole garlic, 1½ inch ginger with ½ cup water finely. Mix, add ¾ ts salt, ¾ ts chilli powder, ¾ ts crushed chilli flakes, 1/3rd ts turmeric powder, ¾ ts coriander powder and ¾ ts cumin seeds. When chicken starts cooking well, bring the heat to medium and cover with lid. Add 1 L tomato sliced whwn the oil starts to separate. Add ½ ts garam masala (check gor its recipe in this channel), mix and cover.
When tomatoes are cooked, add fresh coriander, some green chillies and some ginger cut into matchsticks.
