✓ The type of dosas these guys specialise in are called Rava Dosas; Rava Dosas have a crispier bite due to the addition of semolina in the batter.
We have seen and eaten rava dosas in many restaurants but haven't as yet seen anyone making them on the streets of London, so it's a real treat to come across these guys.
"Don" it has many meanings such as "in a Spanish title prefixed to a male forename", "a university lecturer or a senior member of a college at Oxford or Cambridge" or even "The boss in the Mafia who is the head of the crime family" so it would take a lot of confidence in your dosa making abilities to name yourself "Dosa Dons" which is exactly what these guys have done.
We are kindly told by the "Dosa Master Chef" that the actual Rava dosa batter consists of the following recipe ingredients:
* Water (Pani)
* Semolina (Rava)
* Rice Flour (Bhaat nu Atta)
* Normal Wheat Flour (Ghum nu Atta)
* Cumin Seeds (Jeera)
* Salt (Nimak)
* Green Chillies (Lilu Mirchu)
* Ginger (Adrak)
* Curry Leaves (Curry Limri)
* Coriander (Dhana)
This type of batter does not need to be fermented and can be used straight away.
Mashed Potato Masala Filling ingredients:
* Oil
* Urad Dal
* Chana Dal
* Cumin Seeds
* Mustard Seeds (Rye)
* Ginger
* Coriander Powder
* Asafoetida (Hing)
* Turmeric (Haldi)
* Sambar Powder
* Onion (Dungri)
* Boiled Potatoes (Bateta)
* Lemon Juice (Limbu)
* Green Coriander Leaves
Once the dosa is made its served with a coconut chutney and a tomato Chutney.
Instead of a griddle a perfectly Seasoned cast iron pans are used and the chef kindly reveals the time and effort required in the seasoning process.....additionally rubbing a raw onion on the oiled pan increases the non stick properties of the dosa plate. It's also explained that once the pans start smoking they're ready to use, also you'll be able to tell that it's hot enough to use when there is no excess oil on the pan (because oil only goes to the colder part of the pan).
By the time that we had stopped filming they had sold out so regretfully we didn't get to taste the Rawa Dosas, they were also serving up homemade Chole / Chana Bhature which we also didn't get to taste this time around......but this gives us even more of a reason to pay a return visit ASAP........wink, wink ;-)
Just in case you didn't know the normal regular Masala Dosa is an ubiquitous and very popular food in India. The (eggless) dosa batter for which is made of fermented Rice, Urad Dal & Fenugreek Seeds), which is then predominantly cooked on a hot griddle (in a very similar way to a French Crepe Suzette or Galette or even a Chinese Jian Bing) until it's crispy.
