Ingredients:
• 1 large eggplant (approx. 200-300 grams)
• 1 canned tuna
• thumb-sized ginger
• 3 small sized tomatoes
• 1 small sized onion
• stalk of spring onion
• 2 tablespoons Thai fish sauce
• 3 tablespoons vinegar
• dash of ground black pepper
• approx. 1 tablespoon of brown sugar
Notes:
1. You can substitute the canned tuna with any fried fish available (leftover).
2. If no Thai fish sauce is available, any type of fish sauce you have at home will be fine. Just adjust the taste according to your preference.
3. Drain the excess (half) of the oil from the can or you can just add everything in. Totally your discretion.
4. Grilled eggplant will be the best for this recipe!❤️😍
