On the eve of the unveiling of the 2012 Worlds 50 Best Restaurants list, BigHospitality went to meet the 50 Best Academy - those who head up the voting for the awards - to find out what they look for when choosing restaurants to vote for and their predictions for this year.
The World's 50 Best Restaurants list remains a closely-guarded secret, even to those who have voted, right up until the announcement of the awards.
We went along to speak to members of the academy at one of its last meetings before the awards - at a lunch at Viajante in East London prepared by Nuno Mendes and Italian chef Massimo Bottura - to find out what criteria they have when picking their top restaurants and their predictions for this year's list.
