🍰 Ingredients:
For the Sweetened Coconut
Desiccated Coconut 1 1/2 cups (150g)
Hot Water 1/4 cup (60ml)
Sugar 1 cup (200g)
Water 1/4 cup (60ml) - to get a syrup consistency
Fruit Base
Mixed Dried fruits and Nuts 750g (about 4-5 cups)
I used:
Whole Dates 200g (about 1 cup)
Raisins 150g (3/4 cup)
Red Cherries 100g (about 1 cup)
Flaked Almonds 50g (1/2 cup)
Pumpkin preserve 100g (1/2 cup)
Dehydrated Papaya bits 50g (1/4 cup)
Dried Apricots 50g (1/4 cup)
Ginger preserve 50g (1/4 cup)
Candied peel 30g (¼ cup)
Lemon Zest 1 tbsp
Cinnamon powder (OR allspice powder) 1 tablespoon
Cardamom powder 1/2 teaspoon (optional)
Rum ¼ cup (60 ml) OR any other suitable alcohol OR 1/2 cup orange or grape juice
Golden syrup 3 tablespoons
Vanilla extract 1 tsp
Almond essence 1/2 tsp (optional)
Cake Base
Plain Flour 175g (1 cup, 2 tablespoons)
2 Large Eggs (or 3 medium eggs)
Butter 75g (1/3 cup)
Baking powder 1 teaspoon
Baking soda 1/4 teaspoon
Measuring cup size - 240ml
Baking Pan size 25x20 cm
Bake in a Preheated Oven at 170c (338f) for 50-60 minutes
(If you get a bigger and shallow pan the baking time will be much less!)
Cover the top with a foil paper halfway through baking.
