Recipe :
300 grams of water,
3 grams sugar,
7 grams bread improver,
7 grams of salt,
14 grams of fresh yeast, Dry yeast 7 grams
450 grams of bread flour,
Method :
first we start by adding our flour into our machine bowl, this machine wants to be a 3 speed machine or you can use a bread machine if you like, now add in the rest of the ingredients and the water, I start the machine up on 1st speed for 1 minute, then 5 minutes on 2nd / 3rd speed, stop and now going to check the dough to see what it's like if it's too soft add in more flour if it's too stiff add in more water, now we will continuously mix this now for the next 5 minutes now the dough is ready,
No rest :
Cut into about 8 pieces at about 4 oz / 113 grams each then shape as desired cover
Rest for 10 mins

place tray into a proofing box for about 45 mins to a hour,
Preheat the oven to 220℃, Bake in oven for about 10 mins until golden
Transfer to a wire rack to cool before serving.

For the recipe 1 Tiger paste
• 60g rice flour
• 1/4 teaspoon salt
• 1 1/2 teaspoons dried yeast
• 1 1/2 teaspoons seseme oil must have
• 65ml warm water
• 1 teaspoon sugar
• To make the paste: Mix together rice flour, salt and yeast. Stir sesame oil into the warm water with the sugar. Pour the liquid slowly into the flour, stirring constantly until well combined. For my best Tiger bread a good thick coat, this mixture should be like thick emulsion or wallpaper paste.
For the recipe 2 Tiger paste
Ingredients for the topping:
- 100 grams rice flour
- 100 milliliters warm water
- 5 grams sugar
- 5 grams vegetable oil
- 6 grams yeast or 3 grams dry yeast
- 2 grams sea salt
In a separate bowl, combine rice flour, warm water, sugar, vegetable oil, yeast, and salt. Mix until well combined and smooth.
