Hey guys!! Today I'm presenting to you one of the best dinners you will ever try in your life! This soup recipe comes from Brazil and it's absolutely unforgettable! It's full of fresh and easy to get ingredients and once they simmer together, they create the most mouth watering broth that is truly addictive. The tender, flaky fish gives this soup it's unique flavor and not to forget the coconut milk that makes this the most stopping dinner recipe!
Ingredients:
1&1/2 lbs. Cod or Halibut
1/2 tsp. salt
juice & zest of 1 lime
2 tbsp. oil
1 onion
1 cup carrots
1 red bell pepper
4 cloves garlic
1 jalapeño
1&1/2 cup tomatoes
1 tbsp. tomato paste
2 tsp. paprika
1 tsp cumin
1 cup broth
14 oz. coconut milk
Directions:
Season cut up fish with salt and lime and place to the side to marinate. Add oil to a pot and sauté all the chopped up veggies except the fresh tomato. Once they are all nice and translucent, add the tomatoes, tomato paste, parsley and coconut milk/ stock. Cover and simmer 30 minutes then add the fish and continue to cook about 5 more minutes until fish is tender and ready. Serve this soup with some steamed rice and crusty bread! Enjoy.
