Full recipe ingredients:
1 tbsp olive oil
1 medium yellow onion, chopped 2 celery ribs, chopped
1 medium green bell pepper, chopped
3 garlic cloves, minced
1 cup long-grain rice
3 cups cooked or 2 (15.5 oz) cans dark red kidney beans, drained & rinsed
1 (14.5 oz) canned diced tomatoes, drained
1 (14.5 oz) canned crushed tomatoes
1 (4 oz) can mild green chiles, drained
1 tsp dried thyme
1/2 tsp dried marjoram
1 tsp salt
Freshly ground black pepper
2.5 cups vegetable broth
1 tbsp chopped fresh parsley, for garnish
Tabasco sauce (optional)
