Join us for Virtual International Coffee Hour with the Hispanic Latinx Student Union (HLSU) on Friday, August 7, at 5 p.m., and learn how to make Baked Chicken and Cheese Empanadas.
This event is in collaboration with HLSU's Summer Wellness Series, focusing on promoting positive nutritional, physical, and mental health within the FSU community.
"The Hispanic Latinx Student Union is looking forward to collaborating with the Center of Global Engagement during the International Coffee Hour in our event 'Vamos Comer/Vamos a Comer' to share one of the most popular Hispanic/Latinx dishes in the world, Baked Chicken and Cheese Empanadas," said Adela Larramendi, Director of HLSU. "With this first event of our Summer Wellness Event Series: 'Las Que No Iban A Salir' we want to promote nutritional health from home and demonstrate how easy it is to keep a balanced/cultural diet even during quarantine."
Carlos Garcia, HLSU Programming Coordinator and FSU senior studying psychology and criminology, will lead the cooking demonstration this week. He will be joined by Krystal Nieves, HLSU Programming Coordinator and FSU junior studying athletic training; Caroline Martins, HLSU Programming Coordinator and FSU junior studying international affairs; and Ashley Gonzalez, HLSU Programming Coordinator and FSU sophomore studying political science and international affairs, for HLSU's virtual presentation.
HLSU strives towards encouraging and enabling the academic, professional, and social success of Hispanic/Latinx students on campus through strengthening relationships and the cultural development of students on campus.

Baked Chicken/Cheese Empanadas Recipe
Ingredients list:
● cooked shredded chicken
● green peppers
● onions
● tomato sauce
● shredded cheese
● yogurt
● tablespoons of sofrito
● adobo seasoning (or salt & pepper)
● pre-made empanada discs
Instructions:
1. Dice the pepper and onion. Heat butter or oil in a pan over medium heat and add vegetables. Saute until the peppers and onions are tender.
2. Season shredded chicken with Adobo (or salt & pepper) according to taste preference.
3. Add chicken, tomato sauce, sofrito, peppers and onions to the pan. Mix ingredients over medium heat.
4. Add yogurt and 1 cup of shredded cheddar cheese. Mix together until the cheese is melted, then remove from the heat.
5. Add a tablespoonful of chicken to the empanada disc and sprinkle with additional cheese. Seal with a fork by pressing down on the edges.
6. Brush empanada with egg white wash and pierce the top once with a fork.
7. Bake on a lightly greased pan at 350 degrees for 25-30 minutes until golden brown.
