Roasted Butternut Squash Soup Recipe
Ingredients:
The first steps is to prepare the butternut squash and the garlic cloves since we are roasting them.
1 butternut squash (3 lb)
1/2 tsp olive oil
1/4 tsp sea salt
Sprinkle of pepper
Sprinkle of paprika
Score the top of the butternut squash
3 garlic cloves leave the skin on and just cut the tip a little bit so the Garlic's exposed.
Sprinkle with salt and pepper and a drizzle of olive oil. And wrap in foil.
Three garlic cloves with the skin on add into a piece of foil with olive oil salt and pepper and add it on the tray so they can roast with the butternut squash.
Roast the butternut squash and garlic cloves in the oven at 425° for approximately 30 to 40 minutes or until you can pierce it with the fork.
Remaining ingredients:
2 celery stalks chopped in large pieces
2 med/large carrots chopped in large pieces
1 medium onion chopped and large pieces
32 oz. Vegetable broth
2 bay leafs
1/2 tsp paprika
1/4 tsp pepper
1/4 tsp sea salt
1/4 tsp celery salt
1/2 tsp basil leaves
1/8 cayenne pepper (or just a pinch)
1/8 tsp allspice
1 tsp honey
1 and 1/2 tbsp olive oil
1/8 cup heavy cream
Recipe:
In a large pot add your olive oil heat it up and then add your onion, carrots, celery sprinkle a little bit of salt on the vegetables and saute until tender. In the meantime with a spoon scoop out all the butternut squash. After the vegetables get a little tender then go ahead and add your butternut squash and your roasted garlic in the pot and mix everything together. Then add your teaspoon of honey. And add all the seasoning and the bay leaves. Mix everything up together. Now go ahead and add your 32 oz of vegetable broth. Let it get to a boil, then simmer for approximately 25 minutes with the lid on.
After it's done simmering then we're going to shut the heat off and then we're going to use our hand blender, immersion blender or whatever you have to blend it with. After we blend it up we're going to add 1/8 cup of heavy cream. And then we're going to mix it up and your soup is complete. You compare it with a toasted baguette. You can add some pumpkin seeds in it. So this is my roasted butternut squash soup. Thank you so much for watching what's on my plate 🤗
