In today’s video, I’m showing you how to make my favorite Split Green Pea Soup, homemade vegan pierogies, and crispy vegan crab cakes—all plant-based and perfect to enjoy with your family any time of the year! Split Green Pea Soup Recipe
4-5 large carrots (peeled & chopped)
2-3 small/medium white onions (chopped)
2-3 garlic cloves (grated)
1 bag of split green peas (soaked & rinsed)
3-4 cups of water (enough to cover)
Cover and let simmer on medium heat for 30 mins, then blend using an immersion blender (or regular blender once cooled). Top with chopped parsley, lemon juice, and black pepper.
