Melt-in-our-mouth CARAMEL WALNUT TART!! A favorite Thanksgiving Day dessert!! Easy to make, yet so delicious!! Recipe below...
CARAMEL WALNUT TART
(12 servings)
Preheat oven to 400 degrees F.
3/4 cup packed light brown sugar
1/4 cup plus 2 tablespoons heavy whipping cream
1/4 cup plus 2 tablespoons light corn syrup
3 tablespoons, unsalted butter, cubed
1-1/2 teaspoons pure vanilla extract
1/4 teaspoon salt
2 large eggs, at room temperature, lightly beaten
1 sheet refrigerated pie pastry
1 cup walnuts, chopped
1. In a microwave, heat whipping cream for 20 seconds.
2. Meanwhile, in a large heavy sauce pan, over medium-heat, add brown sugar and light corn syrup. Stir frequently until mixture begins to boil. Continue stirring for 1 minute. Remove from heat.
3. Add warm whipping cream. Whisk until well blended. Whisk in salt and vanilla. Set aside and cool.
4. Unroll pastry sheet into a 9-inch tart pan or pie dish. Line with foil and pie weights or dried beans or uncooked rice. Bake on lower oven rack until edges are golden brown, about 10-12 minutes. Remove foil and weights; bake until bottom is golden in color, 3-5 minutes. Cool on wire rack.
5. Reduce oven temperature to 350 degrees F.
6. Whisk beaten eggs into caramel mixture. Stir in walnuts until well coated with caramel. Add to crust. Bake until center is just set (mixture will be jiggle), 20 to 25 minutes. Cool completely before slicing.
TIPS: Store leftovers in a airtight container in the refrigerator.
