Raspberry Crumble Bars | Raspberry Oatmeal Bars | Easy Recipe
These raspberry bars are made with a beautiful oatmeal crumble and sandwiched between them is a delicious layer of juicy raspberries, and even more crumble topping. Raspberry Crumble Bars
Ingredients
1/2 cup unsalted butter, melted
1/2 cup caster sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup quaker whole-rolled oats
pinch salt
• 330 gms of frozen or canned raspberries
Method
Melt the butter in the microwave for approximately 30 seconds. Stir to remove any lumps.
Add both the sugars, vanilla, and mix to combine.
Add the flour, oats, salt, and mix to combine.
Set half the mixture aside to be sprinkled on later as crumble topping later.
Transfer remaining crumbs to the prepared pan, and using a spatula press down the mixture to create a smooth and flat surface.
Spread the frozen or canned raspberries over the crust making sure to spread right upto the corners.
Sprinkle the reserved crumble onto the mixture.
Garnish with walnuts (optional)
Bake for about 30 to 35 minutes until lightly golden browned. Place pan on a wire rack and allow to cool for at least ans hour and a half before slicing and serving.
