I call it yellow cucumber curry or Vellary curry because I don’t know what’s it originally called👀
I was introduced to these yellow cucumbers only in 2017ish when I tried it from @rkalikot ji’s lunchbox. It was so delicious, that I pestered him for the recipe and decided to make it at home. Went around looking for vellary (it was easy to find). Funny enough I boiled it in lots of water the first time, so I had to discard most of it away - and feed it to my plants lol.
Ever since I make this very often. Super easy and very tasty! Must try.
Ingredients I used:
- 1 small vellary/ yellow cucumber
- salt
- turmeric
- 1 cup water
- 2 slit green chillies
- 1/2 cup coconut + 1/2 inch ginger + 1 tsp jeera paste
- 1 cup whisked yogurt
- 1/4 cup tamarind pulp
Tadka:
- 1 tbsp oil
- 1/4 tsp mustard seeds
- few curry leaves
- few broken red chilies
- 1/4 tsp red chilli powder
