MATKA MUTTON KHEEMA BIRYANI
Hi YouTube Foodies:
Today I will take you through traditional process of making Mutton Kheema Biryani using Matka (Pot). In our house we call it Kunda Biryani.
Ingredients:
• 1Kg Mutton (2 to 3 lbs)
• ½ kg Basmati Rice (1 to 1.5 lbs). Old basmati rice will be more delicious
• 6 cups of water for 3 cups for rice. 1.5 cup water for mutton curry.
• Wheat flour to make dough in order to lock the steam during Dum
• 3 tbl spoon oil for mutton curry and 3 tbl spoons for rice
• 100 gms Biryani Masala (I am using ready made as it is lockdown. You will get in Indian grocery store. You can use any brand. All of them taste same. But you can try homemade masala. I will show it in next video)
• 2 to 3 Bay leaves
• 1 tea spoon Sajeera
• 2 tbl spoon ginger garlic paste for mutton and 2 tbl spoon ginger garlic paste for rice
• All spices (Elaichi, Clove, Dal china chekka etc as per your choice)
• 2 tbl spoons Chilli powder
• 5 green chillies for curry and 5 green chillies for rice
• 1 Large Onion
• Handful of cashew nuts
• 1 cup fried onions for garnishing Dum biryani
• Pinch of turmeric
• Mint and Coriander for garnish
• Salt to taste
• Pinch of saffron mixed in small quantity of milk (This is optional)
• 2 tbl spoon ghee (clarified butter) for taste. This is optional
This recipe serves 4 to 6 people
Synopsis:
In this procedure, we will cook mutton in pressure cooker (5 whistles), then we will cook rice in rice cooker. Once these are done, we will make Dum in Pot with layers of rice, mutton, rice and then garnishing.
Let’s see detailed steps…
Mutton Curry procedure
1. Wash mutton kheema thoroughly in colander for freshness and keep it aside
2. Cut and keep onions and green chilies ready
3. Now, light the stove and place pressure cooker.
4. Put 3 table spoons oil and once oil heats up, add cashewnuts, elaichi, clove. Stir for a few minutes. Then add onion, green chilies and pinch of salt.
5. Now add, pinch of turmeric,2 table spoons ginger garlic paste, 2 table spoons chilli powder. Stir for 2 minutes.
6. Then add mutton masala (either full packet or ¾ of it).
7. Add Mint and Coriander. Stir for a few moments. Ensure this mixture does not burn.
8. Then add Mutton Kheema to this and mix well.
9. Add water (1.5 to 2 cups) to this mutton and close the lid.
10. Let it cook until 5 whistles on medium flame.
Basmati Rice:
1. Soak the basmati rice in cold water for 15-30 minutes. Drain, rinse and set aside.
2. Take 3 cups of rice and wash thoroughly until it smells good. If you wash it well the flavor will be great.
3. Add 3 cups of washed rice and 6 cups of water to the rice cooker.
4. Add 2 table spoons of salt to this rice. When you taste, it should have salty taste.
5. Add Bay leaf, Elaichi, Dalchina chekka, cloves, Sajeera.
6. 3 table spoons of oil.
7. Add little bit of coriander and Mint leaves.
8. Close the lid and let it cook.
Dum Method:
1. For Dum, we used clay pot. If clay pot is not available, then you can use think bottom Vessel. If you are using vessel, then you need to smear ghee to the bottom so that rice does not stick.
2. Take clean pot, from the cooked mutton curry and take 1/2kg mutton along with gray and pour is as layer. This is first layer.
3. Then on this mutton layer, spread ½ of rice as second layer.
4. On this, sprinkle fried onions, coriander and mint leaves.
5. Now place balance mutton curry as layer on top the fried onion garnish
6. On top of this mutton, finally put rest of the rice as layer.
7. Sprinkle fried onions, coriander, mint leaves on this layer.
8. Now, if you wish, add mix of saffron and milk on top along with Ghee.
9. Close the pot with lid. Make stretched dough with wheat flour and put this dough around the lid to lock the steam/air.
10. Put the pot on the stove and cook on low flame for 10 minutes.
