Lemon Blueberry Pancakes Recipe:

Blueberry Sauce:
1 Tablespoon cornstarch
1/4 cup granulated sugar
1/4 cup water
1cup fresh or frozen blueberries
1 Tablespoon lemon juice

Lemon Curd:
1 cup plus 2 Tablespoon sugar
1/2 cup fresh lemon juice
4 large eggs
1 egg yolk
1 Tablespoon lemon zest
10 Tablespoon chilled butter
Pinch of salt

Pancakes:
3/4 cup milk
2 Tablespoon white vinegar
1 cup all purpose flour
2 Tablespoons sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
2 Tablespoon butter (melted)
1/4 teaspoon vanilla
