Instant Pot Chicken Long Rice Recipe
Ingredients:
1 package (10.56 ounces) bean thread noodles
6 cups chicken broth
1 inch piece of ginger, peeled and sliced
2 cloves of garlic, diced
6 chicken thighs
1/4 cup shoyu
Salt and pepper to taste
1 bunch green onions
Directions:
1. Fill a medium mixing bowl with warm water. Place bean thread noodles in water and set aside.
2. Set Instant Pot to saute. Add chicken broth, ginger, garlic, chicken thighs, and shoyu. Close lid and set sealing. Cook on manual high pressure for 10 minutes. Allow 12 minutes natural pressure release.
3. Remove chicken and shred with two forks. Return chicken to the Instant Pot.
4. Drain noodles and add to the Instant Pot. Close lid and set to sealing. Cook on manual high pressure for 2 minutes. Quick release when complete. Stir to combine. Garnish with green onions. Serve immediately.
