A step-by-step guide to how to pasteurize eggs sous vide at home. It’s safe and way easier than you think.
Step 1: Preheat water to 135°F.
Step 2: Place raw eggs (in their shells) in the hot-water bath. (Optionally, place eggs in a plastic bag first, so it will be easier to take them out once pasteurized.)
Step 3: Set the timer for at least 1 hour and 15 minutes.
Step 4: Once the timer goes off, transfer the pasteurized eggs immediately to an ice-water bath to cool thoroughly.
Step 5: Mark them and refrigerate.
