Pigs Feet
Water
Bring water to a boil and add pigs feet. Reduce to a simmer for 1 1/2 hours. Pour off liquid and set pigs feet aside.
1/2 onion
1/2 bunch of celery
Vinegar (enough to cover pigs feet)
2 tablespoons salt
1 teaspoon tellicherry peppercorns
1/2 teaspoon cloves
1/2 teaspoon coriander
1/2 teaspoon dill seed
1/2 teaspoon mustard seed
2 bay leaves
1/2 teaspoon ginger
Bring all ingredients to a boil and simmer for 30 minutes. Add pigs feet and return to a boil and simmer for 15 minutes.
Place pigs feet in jars and top with liquid.
Seal jars and place in fridge for 6-7 days before eating.
