Today we smoked two Tri Tip steaks on the Lone Star Grillz offset smoker in a little head to head competition between two of my favorite rubs (Meat Church's Holy Cow seasoning and Kosmo Q's Cow Cover). After letting it slow smoke at 225 with oak wood, I put it on a grate directly over the fire and reverse seared it to finish. Results were phenomenal!
