Grilled tritip and red chimichurri.
Tritip was from @swift__meats , seasoned with @hardcorecarnivore Black and truffle oil from @sauce for the binder. It went on the @biggreenegg at 250 until it hit 115 internal. I finished it directly on the coals for a caveman style sear. Sliced and enjoyed with the red chimichurri. And it was SO GOOD!
Red chimi:
- 1/2 cup roasted peppers
- 1 tbsp minced garlic
- 1/2 tbsp paprika
- handful chopped parsley
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp crushed red peppers
- 1 tbsp kosher salt
