"Hida Wagyu" is the name given to beef from a black-haired Japanese cattle breed that is at least 14 months old and was raised in the Gifu Prefecture.
The biggest difference between Hida Wagyu and other Wagyu can be found in its marbling as it has incredibly fine marbling, even when compared to other Wagyu. It is like a snowlike mesh of marbling not only permeates through the tender steak cut from the loin and also woven throughout other cuts as well. This gives Hida Wagyu its distinctive juiciness.
