Recipe: South Indian Korma

Ingredients
For Korma Paste
fresh coconut grated without skin1/2 cup
Cashews 1tbsp
roasted chana dal 1tbsp
coriander seeds1tsp
fennel seeds1tsp
cumin seeds1tsp
for Gravy
Coconut oil 2tsp
Curry leaves a few
Cloves 3nos
green cardamoms 2 nos
Peppercorns 6 nos
Star anise 1 nos
Onion chopped 1cup
chilies chopped 1tsp
garlic ginger paste1 tbsp
tomato puree fresh 1/2 cup
turmeric powder 1tsp
red chili powder 1tsp
Curd 1 cup
Salt to taste
coriander leaves chopped 2tsp
Vegetables
cauliflower florets 1/4 cup
potato 1/4 cup
green peas 1/4 cup
french beans 1/4 cup
Carrot1/4 cup
Method
• for a korma paste dry roast fresh coconut grated, cashews, roasted chana dal, coriander seed, fennel seeds, and cumin seeds and make it a fine paste.
• then heat coconut oil in a pan and temper curry leaves, cloves, green cardamom, peppercorn, star anise.
• Add chopped, onion, and saute till golden brown then add ginger garlic paste, and saute for a min.
• Add red chili powder, turmeric, salt, tomato puree, and bhuno for some time.
• Reduce the flame and add curd, and kurma paste mix well, and cook for a min.
• Add all the blanched vegetables cauliflower, potato, green peas, French beans, carrot, and a little water bring it to a boil and add chopped coriander.
• Check and adjust the seasoning
• Garnish with chili oil and powder coconut and serve with paratha or rice.
