Only a few steps are involved in making wrinkled sea salt potatoes with mojo verde and the results are fantastic. The potatoes have a wonderful, creamy texture on the inside while the skins provides an intense salty pop of flavor. The abundance of fresh herbs and lemon juice in the mojo verde give it a bright and acidic flavor...a perfect compliment to the salty potatoes. Try them as a side to grilled steak, roasted fish or roasted chicken!

WRINKLED POTATOES WITH MOJO VERDE (SALSA VERDE)
(serves 4 to 6 as a side)
Flat-Leaf Parsley, 1/2 oz. or 1/3 Cup packed
Cilantro, 1/2 oz. or 1/3 Cup packed
Oregano, 1/4 oz. or 1/4 Cup packed
Garlic, 3/4 oz. or about 5 cloves
Crushed Red Pepper, 1/2 tsp
Capers, 1/2 Tbsp
Sea Salt, 1 tsp
Lemon Juice, 1/2 oz. or 1 Tbsp
Extra Virgin Olive Oil, 4 oz. or 1/2 Cup
New Potatoes, 1 1/2 lbs
