Polish Zapiekanka made in Krakow is a hot open-face sandwich and an amazing Polish Street Food made of a half of a French toasted baguette. Here, I topped with sautéed brown common mushrooms, melted provolone and mozzarella cheese. I prepared 3 different kinds of Zapiekankas - Górlaska, Greek and the Classical one. In Poland almost always served hot with ketchup, or garlic sauce it is a popular street food in Krakow.

The word zapiekanka comes from the verb zapiekać, which means "to bake a dish so that its ingredients combine, and a crispy, browned crust forms on top" (according to Wikipedia.org), however I also think the word broil translates it well. :)
The main ingredients for this recipe:
1 French baguette and/ or 1 honey hole wheat baguette
Sautéed common brown mushrooms
Lots and Lots of cheese - Mozzarella and Provolone, but you can use Gouda
The Classical Zapiekanka:
Chive and fried onion
And if you like ketchup or garlic sauce, ranch probably works as well :))
The Góralska Zapiekanka:
Polish Sausage
Oscypek
You can buy bough in Polish/ Easter European Shop, and the Polish sausage in any supermarket (Publix, Safeway, Costco etc.)
The Greek Zapiekanka:
1/2 Feta cheese
3-4 Kalamata Olives
1 small mini red bell pepper
