Today I will share my homemade creamy chicken and spinach soup recipe from scratch.
For 8 servings you will need:
4 tablespoons of butter or other oil or fat
1/2 chopped yellow onion
2 pounds of chicken cut into bite size pieces
2 containers of fresh baby spinach
4 cups of water
2 teaspoons of Himalayan salt
For the sauce you will need:
2 tablespoons of butter
3 cloves of minced garlic
3 tablespoons of cream cheese
2 cup of half & half or whole milk
Start by preheating the butter under medium heat in a large pot. I am using left over bacon fat to give the soup even better taste. Once the fat has melted, add the chopped onion and 1 teaspoon of Himalayan salt and sauté covered for 10 minutes. And I started with 2 tablespoons of bacon fat and added 2 more as I realized it wasn’t enough.
Next, add the chicken, stir well and cook covered for 30 minutes. Make sure to stir a couple of more times during the 30 minutes to make sure the chicken doesn’t stick to the pot.
After 30 minutes, add as much spinach as the pot can hold, add another teaspoon of Himalayan salt, 2 cups of water, cover and cook for 10 minutes. You will notice how the spinach shrinks and that will allow you to add more spinach. But be careful when pressing the spinach down not to burn your hands. Add 2 more cups of water cover and cook for another 10 minutes. At this point you can add the rest of the spinach and again, be careful not to burn your hands. Cover the pot but leave a little crack to let the steam out and let the soup simmer for 1 hour.
While the soup is simmering, we will make the creamy sauce for it.
In a frying pan, under medium heat, melt the butter; add the garlic and a pinch of Himalayan salt and sauté for just a minute (not 2 minutes like me… I burned it a bit ☺).
Next add 3 tablespoons of cream cheese and start breaking it down with a spoon under medium heat. Once the cream cheese is broken down, add 1/2 cup of half & half and stir for 30 seconds. Add the rest of the half & half and simmer under LOW heat for about 5 minutes, or until the sauce has thickened.
When the hour of simmering the soup is over, add the creamy sauce and stir very well, put the burner between medium and low and let it simmer uncovered for 30 minutes, or until the soup has a creamy consistency. Serve and enjoy!
