If you crave a light citrus flavor and these orange cupcakes will give you just that. These orange cream filled cupcakes is super yummy. You must try this!
Makes 12 cupcakes
INGREDIENTS
For the cupcakes:
2 large eggs, at room temperature
1 cup (200g) white granulated sugar
1 teaspoon baking powder
2 tablespoons freshly squeezed orange juice
zest of 1 orange
125g sour cream (or organic yogurt 5%)
1/4 cup + 3 tbsp (100g) unsalted butter
1 1/2 cup (190g) all-purpose flour
For the cream cheese frosting:
1 stick (113g) unsalted butter
8 oz (225g) cream cheese Philadelphia
1 teaspoon vanilla extract
100g powdered sugar

PREPARATION
1. Preheat oven to 340°F/170°С.
2. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until pale and fluffy, about 2 minutes. Reduce the speed to medium low; slowly beat one by one eggs, then add the sour cream, orange zest and orange juice.
3. Combine flour and baking powder in a bowl. Add the dry mixture to the dough.
4. Spoon mixture into prepared muffin pan. Bake for 20 to 25 minutes, or until a skewer inserted into the centre comes out clean. Let cool 5 minutes, then remove the cupcakes to a rack to cool completely.
5. Cut out top of baked cakes and put some filling in each.
6. Make the frosting. Combine cream cheese and butter in the bowl, and mix until smooth, creamy and well blended. Blend in the vanilla extract. Slowly add the powdered sugar until you reach the desired consistency.
7. Pipe the frosting onto each cupcake. I used Wilton 4B piping tip. Decorate with zest of orange. Enjoy!
