Lavender Bee’s Knees:
2 ounces Gin
3/4 ounce lemon juice
3/4 ounce Lavender-and-honey simple syrup
Shake with ice
Pour into a chilled glass
Garnish with lemon peel or lavender pieces
Simple Syrup:
1 cup honey
1 cup water
3 tablespoons lavender
Bring to a boil and let simmer until honey is dissolved, then let sit up to an hour depending on how much flavor you want.
Strain.
