I drink snake soup here in Hong Kong which is usually consumed in the Winter. Snake soup is known to be an aphrodisiac. According to Chinese medicine, the snake meat has medicinal benefits including warming the body, improved circulation, generates radiant skin and helps recovery of bones and muscles.
The soup itself is made from snake meat slowly simmering with crunchy black fungus, lemon herbs, and ginger. Chicken and pork chunks are added as well and this balance out the gaminess from the snake meat.A slurry is added to thicken the soup. Toppings include a shredded lemon leaf, crispy fried dough skins along with white pepper and chrysanthemum petals for a complex taste. Snakes shops sell snake meat and the snakes are contained inside the wooden drawers.
Traditional Cantonese restaurants offer snake soup paired with winter dishes such as stick rice cooked with Chinese sausage. Snake shops tend to be passed down from one generation to the next since the special training to handle and process the snake and making the delicate soup.
