Serves 4- 6 Preparation and cooking time - 45 mins
INGREDIENTS:
Butternut Squash, (1 medium sized) cut as shown in the video:
White (or Spanish) onions, Sliced fine -1 each
Snubnose Chilli, deseeded and sliced - 1 each
Coriander leaves (washed and chopped)
Salt and pepper - to taste
Mild olive oil or vegetable oil
Coconut Milk: Made by whisking 1 can (500g) coconut cream with 500ml water
