Claire from Casa Olea explains the process called "machacando aceitunas", which literally means crushing/pounding the olives. Once the olives have been picked from the tree, they are crushed by hand so the skin is cracked and they can then be cured more easily. Some people here even crush them one by one using the bottom of a beer bottle!
