A quick look at Opinel Knives and the #7 stainless in particular. How easy is it to sharpen, should I buy carbon or stainless and how big is it?
I've owned and used a few of these over the years and its often my choice for lightweight hiking where a simple pocket knife has a load of uses from food preparation, to whittling a tent peg or cutting the stray edge off something.
