Taiwanese egg pancakes (dan bing) are the ultimate street food breakfast in Taiwan. Without being able to travel due to the pandemic, I miss Taiwan street food so much that I decided to make one of their most popular street food at home!
It has a chewy thin crepe-like layer with eggs and assorted fillings, a truly heartwarming breakfast item that is easy and quick to cook at home! This recipe uses ham and cheese as pancake fillings but you can add any fillings of your choice, such as meat floss and sweet corn.
Serving size: 4 pancakes
Ingredients
For the batter:
* 240ml water
* 80g plain flour
* 20g corn starch
* 15g spring onion
For the filling:
* 4 eggs
* 4 cheese slices
* 4 ham slices
* Ketchup (to dip)
