raw rice - 1 cup
sugar - 3/4 cup
water - 1/2 cup
cardamom powder - 1/2 teaspoon
ghee - 1 tbsp
oil to fry
RECIPE
Soak the rice for 2 hours. Dry the rice for 30 minutes. (use a towel if you can which will help to absorb the moisture)
Grind to a powder, mix cardamom powder.
In a separate pan, add water and sugar and bring it to a boil.
Once it starts to boil, fix the candy thermometer and monitor until the temperature reaches 230°F (110°C).
Turn off the stove and add the rice flour to the melted sugar syrup and mix well.
Chill the dough in the fridge for 1 day. Mix the dough, roll into a flat shape and fry.
Adhirasam ready
(When you use the candy thermometer, make sure the tip isn't touching the bottom or the side of the pan. It should only be in contact with the syrup)
