Kousa Mahshi
Stuffed grey zucchini with spiced rice and ground beef
Stuffed Zucchini
11-12 small grey zucchini
1.5 cups short grain rice (washed & rinsed)
1.5 lbs extra lean ground beef
1 tbsp 7 spice
1 tsp allspice
½ tsp cinnamon
1 tsp black pepper
2 tsp salt (or to taste)
Cooking liquid:
6-7 cups water
4 tbsp tomato paste
1 tsp 7 spice
1 tsp allspice
½ tsp black pepper
1.5 tsp salt (or to taste)
🔸Trim the bottom and tops of the squash, and core them carefully using a squash corer
🔸Wash them well in a bowl with salted water, rise well from the inside and out, and let them dry by standing them up straight
🔸In a mixing bowl, mix the rice and spices by hand
🔸Stuff the zucchini with the rice and beef mixture, leave about half an inch at the top so the rice can expand
🔸Bring a pot of water to a boil, add tomato paste and mix it around to melt, add in the rest of the spices
🔸Once at a boil, add in the stuffed zucchini, bring down to medium low and cook the zucchini for 30-40 mins, or until it is tender and the rice is cooked through. Take one out and test by breaking the top with a spoon
🔸Serve over stuffed zucchini over plain white rice, and ladle tomato broth over it
🔸To store: separate the tomato broth from the zucchini if you have leftovers, if the zucchini stays within the broth in the fridge, they will absorb more liquid and will bust
