This Oatmeal with a Poached Egg and Parmesan Cheese dish has a creamy and chewy texture, with a savory flavor and slight saltiness from the parmesan cheese, and a sweet and tart flavor from the pomegranate seeds. INGREDIENTS for 1 serving:
60 g Oats
140 g Coconut or almond milk
1 tbsp Grated Parmesan cheese
1 Egg
5-6 Hazelnuts
2 tbsp Pomegranate seeds
1 tsp Butter (optional)
a pinch of Salt
Freshly ground black pepper
Recipe:
1. Put a saucepan on medium heat, and add oats and milk to the pan. Then ddd a pinch of salt and freshly ground black pepper. Cook till the oatmeal is done. In the end of cooking add butter to the pan with the oatmeal and mix.
2. Prepare the poached egg.
3. Peel the pomegranate, and take the seeds out.
4. Chop the hazelnuts.
5. Grate Parmesan cheese on a fine grater.
6. Place a couple of tbsp of oatmeal in the serving bowl. 7. Then add some grated parmesan. Repeat these layers till all the oatmeal is in the bowl. Finish with the Parmesan cheese layer.
7. Sprinkle the oatmeal with pomegranate seeds and chopped hazelnuts. Then place the poached egg on top of the oatmeal.
Finish with freshly ground black pepper and enjoy!
