Chocolate cake:
6 egg whites
6 egg yolks
1/2 tsp vanilla
150 g sugar
40 g boiling water
20 g cocoa powder
130 g flour
6 g baking powder
20 cm cake pan
40-45 min 340F (170 °C)
Cheese cake:
400 g powdered chocolate biscuits
120 g melted butter
15 min in the refrigerator
25 cm cheese Cake pan
Heat 400 g full-fat cream
Melt 200 g dark chocolate
20 g gelatin powder
120 g cold water
600 g full-fat cream cheese
80 g sugar
10-12 hours in the refrigerator
Ganache for decoration:
4 g gelatin powder
30 g cold water
160 g full-fat cream
110 g dark chocolate
Reserve 1 hour in the refrigerator then cut
