Get ready to bake these “Ukrainian Cottage Cheese Cupcakes”, now with a festive Christmas twist! Perfect for breakfast or dessert, these soft and creamy cupcakes are sure to add a touch of holiday magic to your table.
Ingredients:
🍶 Cottage cheese - 250 g
🍶 Eggs - 2 pcs
🍶 Sugar - 2 tbsp
🍶 Flour - 3 tbsp
🍶 Baking powder - 1/2 tsp
🍶 Vanilla essence - 1/2 tsp
Separate the egg yolks from the whites. Add the cottage cheese to the yolks and blend with an immersion blender until smooth.
Add sugar and vanilla essence to the mixture, then blend again. Gently mix in the flour and baking powder with a spatula.
In a separate bowl, whip the egg whites until stiff peaks form. Carefully fold the whipped whites into the yolk mixture, keeping the batter light and airy.
Preheat the oven to 180°C (350°F). Grease a baking dish with oil. Pour the batter into the prepared dish and bake for 15 minutes.
Let it cool completely, then decorate with melted chocolate or glaze as desired.
