Ingredients
1L chicken broth or any you have
400g/15 oz cubed squash
300g/11 oz flour
1 tsp nutmeg
2 broccoli
Green beans
Carrot
Sweet corn
Salt, pepper
HOW TO COOK SOUP:
Today we are cooking healthy vegetable broccoli soup with pumpkin!

First pour 1L chicken broth into the pot for soup, and 1L water.
You can use any broth at your taste. :)
For dumplings I am using already cooked, cubed butternut squash.
My squash is half unfrozen, I want it to be a little cold.
Add salt at your taste.
Mix squash with a blender.
To make dough we need to add flour little by little.
Also add 1 tsp of nutmeg.
Mix well.
Add flour till your mixture becomes like the dough.
Don’t put all the flour at once, it’s important to do it little by little.
Put the flour on the bottom so you can easily roll out the dough.
We also need broccoli.
Cut the head flowers from 2 broccoli.
Now put more flour on the dough so it doesn’t stick.
Take one small part of the dough and roll it.
Roll it into thin long sausage.
And now cut dumplings.
Add broccoli to the pot with broth.
I will also use some frozen veggies.
When I’m in a hurry, I use frozen ones because it really saves my time.
I want to show you how to make quick veggie soup when you are in a hurry.
Now add green beans, carrots and corn to the soup.
Salt it at your taste.
Look at these small delicious squash dumplings.
The rest of the dough you can keep in the freezer for next time.
When the soup is boiling, add dumpling into the soup.
After boiling, cook for 1-2 more minutes and turn off the heat.
Soup is done! Delicious and healthy soup! :)
Sprinkle it with olive oil for more aroma.
