Beni shoga is the red pickled ginger strips you see served with yakisoba, gyudon (Japanese beef bowl), and okonomiyaki that adds a sour punch to dishes.
This is super easy to make and only requires 2 ingredients!
Why bother making this at home? I went to the store to find premade beni shoga and was disappointed that I couldn't find a product without added food coloring and that scary California Prop 65 warning that seems to be on everything nowadays.
Ingredients:
-ginger
-plum vinegar (This isn't actually vinegar. It's a brine leftover from making umeboshi aka salted Japanese plums)
*You can find plum vinegar in a Japanese grocery store or Whole Foods!
Save the water used to cook the ginger! It's ginger tea!
