In this video, I will be making a simple, crispy salad that will be ideal for lunch or a light dinner.
You will need:
2 cups of cooked chickpeas (or from a can)
2 big size aubergines
4 tbsp of olive oil
0.5 cup of pomegranate seeds
2 garlic cloves pressed
2 tbsp of vinegar
1 onion chopped
2 tbsp of fresh parsley
1 tsp of salt
1 tsp of pepper
1 tsp of 7 spice
1 tsp of cumin seeds
2 tbsp of honey
