Ingredients
- Carrots
- Green chilies
- Garlic
- Salt
- Cumin seeds
- Fennel seeds
- Mustard seeds
- Mustard oil
- Hing (asafoetida)
Instructions
1. Prepare the mixture: Wash, clean, and chop carrots and green chilies. Add salt and mix well.
2. Sunlight: Keep the mixture in sunlight.
3. Roast spices: Dry roast cumin seeds, fennel seeds, and mustard seeds. Grind into a coarse powder.
4. Sunlight (again): Keep the spice powder in sunlight.
5. Heat oil and mix: On the 3rd day, heat mustard oil, let it cool, add hing, and mix into the pickle mixture.
6. Fill and store: Fill the pickle mixture into a clean, dry container and keep it in sunlight.
7. Ready to eat: The pickle is ready to consume from the very next day!
