Today I thought I’d give you some inspiration for everyday meals with my What I Eat In A (Gluten Free) Day video! I love filming these and am going to try and make them a regular thing as every day is so different! Today I was at home to cook all my meals so I made mushrooms and egg on toast for breakfast, a Big Mac Salad Bowl for lunch and the BEST gluten free slow cooker chicken casserole for dinner! BREAKFAST - Mushrooms fried in butter and thyme with a fried egg and chopped chives on gluten free toast.
LUNCH - Big Mac Bowl:
INGREDIENTS (per bowl)
250g lean beef mince
1/2 tsp onion salt
1/2 tsp garlic granules
1/2 tsp paprika
1/2 iceberg lettuce
Chopped cherry tomatoes
Gherkins
Finely chopped onion
1 tbsp tomato ketchup
2 tbsp light mayo
METHOD:
1. Fry the beef mince in a little oil with the garlic granules, onion salt and paprika until browned. Season with salt and black pepper if needed.
2. Add chopped iceberg lettuce and tomatoes to a bowl. Mix the sauce up using the ketchup, mayo, some finely chopped gherkins and a little of the juice from the gherkin jar.
3. Pile the mince onto the lettuce, drizzle over the sauce and sprinkle with finely chopped onion and gherkins.
