Recipe:
1 lb shrimp
1 medium onion
1 bell pepper
3 garlic cloves
2 tablespoons oil
½ teaspoon turmeric
2 teaspoons ground coriander
2 teaspoon curry powder
1 teaspoon cumin
13.5 oz can coconut milk
14.5 oz diced tomato
Rice for serving
Cilantro
Lime
1. Peel and clean the shrimp.
2. Chop the onion, slice the bell pepper and mince the garlic.
3. In a large pan heat two tablespoons of oil and sauté the onion and garlic until the onion is cooked through.
4. Add the turmeric, ground coriander, curry powder and cumin. Give everything a stir then add the bell pepper.
5. Cook for 5 minutes until the bell pepper has slightly softened.
6. Add the coconut milk and diced tomato, bring to a boil and simmer for 5 to 10 minutes until the sauce has thickened.
7. Add the shrimp to the sauce and simmer for around 5 minutes or until the shrimp is cooked through.
8. Serve over rice and garnish with cilantro and limes.
