ingredients:
2½-3 lbs chicken, cut up into pieces
1 onion, thinly sliced
1 carrot, thinly sliced
1 celery stalk, thinly sliced
4 tbsp butter
½ tsp salt
⅛ tsp white pepper
3 tbsp flour
3 cups chicken stock
1 cup dry white wine
small herb bouquet (2 parsley sprigs, ⅓ bay leaf, and ⅛ tsp thyme), tied in washed cheesecloth
2 egg yolks
½ cup whipping cream
salt and white pepper, to taste
drops of lemon juice
pinch of nutmeg
onions:
18-24 shallots, peeled
½ cup water
2 tbsp butter
salt and pepper to taste

mushrooms:
¼ lb. fresh mushrooms
⅓ cup water
⅛ tbsp lemon juice
1 tbsp butter
