▪️1 Tbsp Butter▪️2 Medium Chicken Breasts▪️Salt & Pepper▪️1/2 Cup Chicken Broth▪️1 Cup BBQ Sauce▪️2 Kaiser Rolls▪️2 Slices Provolone or Mozzarella Cheese▪️Butter Lettuce▪️Red Onion▪️Cilantro▪️

🌱Vegan Modification: Sub in firm tofu for chicken and vegan cheese for cheese; drain the tofu between two towels under something heavy for 30 mins then slice into 1/4” strips and pan fry in oil until golden brown; mix with bbq sauce (leave out the chicken broth) and enjoy

1️⃣ In a pot over medium high heat, sear chicken in butter with salt and pepper for 2-3 mins per side until golden brown
2️⃣ Add the chicken broth and bbq sauce and cover and simmer on medium low for 15-20 mins (until internal temp reaches 165F or higher); turning the chicken over and mixing halfway though
3️⃣ Take the chicken out and shred it with two forks, then return it to the pot with the sauce (if your sauce is thin you can turn the heat back on so some of the moisture cooks off but I didn’t have to)
4️⃣ Slice the buns in half and place a slice of cheese on the top half; broil in the oven for 1-2 mins until golden brown (watch carefully because they will burn easily)
5️⃣ Serve with lettuce, onion, and cilantro and enjoy!
