This is my simple but yet delicious pineapple coconut cake that everyone will like. The natural sweet taste from both pineapple and coconut flakes is out of this world!! What like most about this cake is that it’s not too sweet at all!!
Ingredients:
1 cup unbleached all purpose flour
1 cup pineapple tidbits
1/2 cup organic sweetened coconut flakes or the regular
1/2 cup butter ( l used a healthy plant based one)
1/3 cup sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 cup milk ( you can use any type)
1 teaspoon vanilla extract
Bake at 350°C for 40 minutes or until toothpick dipped into cake comes out clean. I used 8 in x 6 in x 2 in baking pan.
